Definitely raw, no other way to make it!! I always warn folks but other doesn’t taste the same. I always just use same ingredients my mommy used for eggnog (no spices and she hated nutmeg) just a bit sweeter… love this memory! Remember grandpa Warmington and uncle Ernest Shelburne having us kids crank those old cannister filled with yummy goodness!RECIPE FROM M. KAY ERNST:One of my earliest family memories is homemade ice cream in a cranker freezer. The three of us girls always got to crank early in the process, then the folks took over. The wooden crank freezers, I discovered, needed to be kept in a cool damp place or they fell apart. Living in Western Idaho and Eastern OR, I had had such a place. After going through 2 or 3 finally gave up and bought an electric one. Here is the Ice cream recipe my Mom gave to me: 8 eggs, which I beat some with an old hand style mixer; then add 2 1/2 cups sugar and mix well to dissolve sugar; 1 pint of whipping cream; 1 quart half and half (NOT fat free!); mix well. 2 -3 Tablespoons vanilla and a pinch of salt. Pour into freezer can and swish bowl with a little milk, then add milk to fill line. I have never liked the cooked custard type.
